Easy, Healthy Kale Salad


 

The holidays often call for extravagant meal preparations for family get togethers and potlucks. With this recipe we wanted to give you and your stomach a break from the heavy meals and sugary treats.

If a healthy diet is part of your New Years Resolution, try this quick and easy Kale Salad!

Ingredients

  • 1 Large head of kale, stemmed, leaves cut into bite-size pieces
  • 1/2 lemon, juiced
  • 1/2 cup balsamic vinegar
  • 1/3 cup extra-virgin olive oil
  • 1/4 cup slivered raw almonds
  • coarse sea salt to taste

Directions

  1. Place kale in a large bowl. Drizzle balsamic vinegar, olive oil, and lemon juice over the top; toss to coat. Add almonds and salt; toss to combine.

  2. Cover the bowl with plastic wrap and refrigerate until flavors combine, 15 to 30 minutes.
